I use a square 9x9 dish for this recipe, you can use a larger pan to make a thinner krispie or double the recipe for a greater number of servings.

To speed up the setting process, you can totally set your rice krispies in the fridge. I like to throw mine in the fridge or freezer while I am whipping up the chocolate topping. These can set on the counter top but putting them in the fridge will help the process speed up.

How To Temper Chocolate?
You can “temper” chocolate using a simple method that does not require a thermometer. Though not as precise as the temperature method, this way is also much easier. If you are making a simple dessert like these rice Krispies, then give this temper method a try! Tempered chocolate is usually shiny and very stable so that it can sit on your counter top. This helps your desserts last longer.
Measuring out 2 Tbs or about 20 grams of chocolate chips, finely chop the chocolate until is almost resembles chocolate dust. When you chocolate chips are melted in the microwave, combine them together and stir vigorously until the the chocolate dust is incorporated into the melted chocolate. Though not perfect, this will give the cooled chocolate a little more shine and will help stabalize it.
Ingredients For Chocolate Dipped Rice Krispie Treats
Recipe: Makes 9 Rice Krispies
- 3 Tbs butter unsalted
- 25 large marshmallows I use Jet Puff Marshmallows but any type will do.
- 3 cups puffed rice cereal I use Rice Krispies
- pinch of salt Marshmallows are super sweet, this helps balance the flavors.
- 1/2 tsp vanilla optional but adds a little boost in flavor.
- 1 cup chocolate chips + 2 Tbs separated
How to Make Chocolate Dipped Rice Krispies
Make the Rice Krispies
Over medium heat, melt the butter
Once the butter is melted, add the marshmallows, salt and vanilla
Continuously stir until the marshmallows are melted. If the mixture starts to seem to sticky, stir off the heat. You can even turn your heat off and keep stirring!
Add the marshmallow mixture to a large bowl with the puffed rice cereal.
Using a metal spoon or similar, mix until combined. To help prevent sticking to your spoon, you can smear a little butter or oil on your spoon before starting to mix everything.
Press the rice Krispies into a 9x9 baking dish that has been lightly coated with butter or oil. Set aside to cool.
Melt and Add the Chocolate
Finely chop the 2 Tbs of chocolate chips until close to a chocolate dust consistency. You can also use a food processor.
To a microwave safe bowl, add the one cup of chocolate chips. Melt in 15-20 second increments, stirring in between.
Once the chocolate is melted, immediately combine with the chocolate dust and stir vigorously until uniform
Pour and spread the chocolate over the rice Krispie base until evenly coating the mixture.
Set aside to cool and enjoy once the chocolate has set.
